- 8 oz pasta (penne or fettuccine)
- 1 cup chorizo, sliced
- 1 cup chicken breast, diced
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Toss in the chopped onion and minced garlic. Stir frequently until the onion becomes translucent, about 2-3 minutes.
- Introduce the sliced chorizo and diced chicken to the pot. Cook until the chicken is golden brown and the chorizo is crispy, stirring occasionally for about 5-7 minutes.
- Stir in the diced tomatoes and heavy cream. Season with chili powder, salt, and pepper, allowing to simmer for about 5 minutes.
- Cook the pasta in a separate pot according to package directions until al dente, about 8-10 minutes.
- Drain the pasta and combine it with the creamy chorizo and chicken mixture. Toss to coat, remove from heat, garnish with fresh cilantro, and serve hot.
Notes
For a lighter version, substitute heavy cream with half-and-half or a non-dairy alternative. Feel free to customize with extra vegetables.
