Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. Prepare Wet Ingredients: In another bowl, mix together the melted butter, eggs, and vanilla extract until smooth and creamy.
  4. Combine Ingredients: Pour the wet ingredients into the dry ingredients, folding gently until just combined. Be careful not to overmix; some lumps are fine.
  5. Add Dulce de Leche: Fill each muffin cup halfway with batter. Add a spoonful of dulce de leche in the center, and then top with more batter until each cup is about three-quarters full.
  6. Bake: Place your muffin tin in the preheated oven. Bake for 18-20 minutes or until a toothpick comes out clean when inserted into the muffins.
  7. Coat in Cinnamon Sugar: Once out of the oven, roll each warm muffin in a mixture of sugar and cinnamon for that classic churro flair.
  8. Serve: Enjoy them immediately, optionally drizzled with extra dulce de leche for an even more indulgent treat.

Notes
