- 2 1/4 teaspoons active dry yeast
- 3/4 cup warm water (110°F or 43°C)
- 1/4 cup sugar
- 1/4 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon salt
- 2 large eggs
- 3 to 4 cups all-purpose flour

Instructions
- Activate the yeast: In a small bowl, mix the warm water with the yeast and a pinch of sugar. Let it sit for about 5 minutes until frothy.
- Whisk together the base: In a large bowl, combine the remaining sugar, milk, melted butter, salt, and eggs. Whisk until smooth.
- Combine ingredients: Gently fold in the yeast mixture. Gradually add in 3 cups of flour, stirring until a soft dough forms.
- Knead: Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
- Let it rise: Place in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour.
- Shape the rolls: Punch down the dough, divide into pieces, shape into rolls, and place on a parchment-lined baking sheet.
- Second rise: Cover rolls with a towel and let rise for another 30 minutes while preheating the oven to 375°F (190°C).
- Brush and bake: Brush tops with melted butter, sprinkle with coarse salt, and bake for 15-20 minutes until golden brown.
Notes
