Ingredients

  • 8 oz ramen noodles
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 cucumber, julienned
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds

Instructions

  1. Cook the ramen noodles according to package instructions, then drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, and honey until smooth.
  3. Toss the cooled noodles with the peanut sauce until well coated.
  4. Add the julienned cucumber, cilantro, and green onions to the noodles and mix gently.
  5. Serve chilled, garnished with sesame seeds.

Notes

  • For a spicier version, add chili flakes or sriracha to the peanut sauce.
