Ingredients

- 1 cup marinara sauce
- 1/2 cup chopped bell peppers
- 1/2 cup sliced mushrooms
- 1/2 cup chopped spinach or kale
- 1/2 cup shredded mozzarella cheese

- Sliced olives and diced onions (optional)
- Fresh basil (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the cottage cheese with a pinch of salt and pepper in a mixing bowl.
- Pour the marinara sauce over the cottage cheese and mix gently.
- Fold in the chopped bell peppers, sliced mushrooms, and greens.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Top generously with shredded mozzarella and any additional toppings.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
Notes
You can prepare the mixture in advance and refrigerate for up to 24 hours. This dish can also be made in an air fryer for a quicker option.
