Description

Delicious scones bursting with zesty orange and tart cranberries, topped with a sweet glaze.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1/3 cup (65 g) granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon fresh orange zest
  • 1/2 cup (115 g) cold unsalted butter, cubed
  • 1/2 cup (60 g) dried cranberries
  • 3/4 cup (180 ml) cold heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120 g) powdered sugar
  • 2–3 tablespoons fresh orange juice
  • 1/2 teaspoon orange zest (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • A few extra dried cranberries (optional)
  • Coarse sugar for sprinkling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, salt, and orange zest in a large bowl.
  3. Add the cold, cubed butter, using a pastry cutter or fork to work it into the mixture until it resembles coarse crumbs.
  4. Stir in the dried cranberries to ensure even distribution.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract. Pour this mixture into the flour blend, stirring gently until a shaggy dough forms.
  6. Transfer the dough to a floured surface and gently pat it into a circle about 1 inch thick. Cut into 8 wedges and arrange them on the baking sheet.
  7. Brush the tops with extra cream and sprinkle with coarse sugar if desired.
  8. Bake for 18–22 minutes or until golden brown. Allow to cool on the sheet for 5 minutes before transferring to a wire rack.
  9. For the glaze, whisk together powdered sugar, orange juice, and zest until smooth. Drizzle it over cooled scones and sprinkle with extra zest or cranberries.
  10. Allow the glaze to set for about 10–15 minutes before serving.

Notes

For best results, use cold ingredients and avoid overmixing the dough.
