- 1/3 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 cup unsalted butter, frozen
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries, sliced in half
- 2/3 cup powdered sugar (for glaze)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the plain flour, granulated sugar, and baking powder in a large mixing bowl. Whisk until well blended.
- Grate the frozen butter into the dry ingredients. Use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
- Pour in the heavy cream and vanilla extract. Gently stir until just combined, being careful not to overmix.
- Fold in the halved fresh cranberries until evenly distributed throughout the dough.
- Turn out the dough onto a floured surface, shaping it into a circle approximately 1 inch thick.
- Cut into wedges and place them onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden brown.
- Whisk together the powdered sugar with a splash of water until smooth for the glaze, and drizzle over the cooled scones.
Notes
Make the scone dough a day in advance and refrigerate until ready to bake. For a twist, substitute buttermilk for heavy cream or replace cranberries with blueberries.
