Description

Ingredients

  • 1/3 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 cup unsalted butter, frozen
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh cranberries, sliced in half
  • 2/3 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the plain flour, granulated sugar, and baking powder in a large mixing bowl. Whisk until well blended.
  3. Grate the frozen butter into the dry ingredients. Use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
  4. Pour in the heavy cream and vanilla extract. Gently stir until just combined, being careful not to overmix.
  5. Fold in the halved fresh cranberries until evenly distributed throughout the dough.
  6. Turn out the dough onto a floured surface, shaping it into a circle approximately 1 inch thick.
  7. Cut into wedges and place them onto a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes until golden brown.
  9. Whisk together the powdered sugar with a splash of water until smooth for the glaze, and drizzle over the cooled scones.

Notes

Make the scone dough a day in advance and refrigerate until ready to bake. For a twist, substitute buttermilk for heavy cream or replace cranberries with blueberries.
