- 8 oz pasta of choice
Instructions
- Cook the pasta according to package instructions until al dente.
- In a food processor, combine avocados, basil, garlic, pine nuts, and Parmesan cheese.
- Blend until smooth, then slowly add olive oil while blending.
- Season with salt and pepper to taste.
- Drain the pasta and return it to the pot.
- Add the avocado pesto to the pasta and toss to combine.
- Serve immediately, garnished with extra pine nuts and basil if desired.

- For a vegan version, omit the Parmesan cheese or use a vegan alternative.
