- 8 oz penne pasta
- 1 lb chicken breast, diced
- 2 cups spinach, fresh
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the penne pasta according to package instructions until al dente, then drain.
- In a large skillet, sauté the diced chicken over medium heat until cooked through.
- Add the minced garlic, sun-dried tomatoes, and spinach to the skillet, cooking until the spinach wilts.
- Stir in the heavy cream, Italian seasoning, salt, and pepper, and let it simmer for a few minutes.
- Combine the cooked pasta with the chicken mixture and half of the mozzarella and Parmesan cheese.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Notes
- For a lighter version, you can substitute heavy cream with Greek yogurt.
