  • 200g firm tofu, cubed

  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped green onions
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine vegetable broth, coconut milk, red curry paste, soy sauce, and lime juice. Bring to a simmer.
  2. Add the ramen noodles and cook according to package instructions.
  3. In a separate pan, sauté the cubed tofu until golden brown.
  4. Add the sautéed tofu, spinach, and mushrooms to the pot and cook for an additional 2-3 minutes.
