Description

A delicious and creamy pasta bake featuring fajita-seasoned chicken, bell peppers, and a cheesy topping.


Ingredients

  • 2 cups cooked pasta
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 cup cream cheese
  • 1 cup shredded cheese
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the diced chicken until browned.
  3. Add the sliced bell pepper and onion, cooking until softened.
  4. Stir in the fajita seasoning and chicken broth, then add the cream cheese until melted and combined.
  5. Mix in the cooked pasta and half of the shredded cheese.
  6. Transfer the mixture to a baking dish and top with the remaining cheese.
  7. Bake for 20-25 minutes until bubbly and golden.

Notes

  • Feel free to add more vegetables like zucchini or corn.
  • For a spicier kick, add jalapeños.
