Instructions
- Cook the ramen noodles according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Pour in the heavy cream, lemon juice, and lemon zest. Stir to combine and let it simmer for a few minutes.
- Add the fresh spinach to the skillet and cook until wilted.
- Mix in the cooked ramen noodles and toss to coat in the creamy sauce.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.

- For a vegan version, substitute heavy cream with coconut cream and omit Parmesan cheese.
