Description

Indulge in the rich and creamy flavors of peanut butter and coconut milk combined with juicy chicken, finished off with a splash of lime juice.


Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Toss in the diced onion and sauté until softened, roughly 5 minutes.
  2. Add the minced garlic and continue cooking for an additional minute until it releases its aroma.
  3. Introduce the chicken pieces to the skillet, seasoning them with salt and pepper. Cook until the chicken is browned on all sides, about 5-6 minutes.
  4. Combine your peanut butter, coconut milk, soy sauce, and lime juice in a mixing bowl. Stir until smooth.
  5. Pour the creamy peanut sauce over the chicken in the skillet, stirring to coat. Simmer for about 10-15 minutes until the chicken is fully cooked.
  6. Serve the creamy peanut chicken on plates, garnished with chopped peanuts and fresh cilantro.

Notes

For best results, marinate chicken in peanut sauce overnight. Can be made healthier by using an air fryer.
