- 1 lb lean ground beef
- 1/2 cup finely diced onion
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup low-fat cottage cheese
- 1 cup shredded reduced-fat Mexican blend cheese
- 4 large high-protein or low-carb tortillas
- 1/2 cup shredded Mexican blend cheese
- Cooking spray or 1 tsp olive oil
- Optional toppings: salsa, Greek yogurt, diced tomatoes, shredded lettuce, sliced jalapeños, green onions, fresh cilantro
Instructions
- Brown the beef mixture: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook until the beef browns and the onion becomes tender. Drain any excess grease.
- Add minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Stir and let the flavors blend, cooking for another 1-2 minutes.
- Reduce the heat to low. Stir in the cottage cheese until fully combined. Remove from heat and fold in shredded cheese.
- Lay the tortillas flat and divide the beef mixture evenly among them. Fold the sides inwards and roll tightly.
- Lightly spray a skillet with cooking spray or brush with olive oil. Cook the wraps seam-side down for 2-3 minutes on each side.
- Serve warmly and add optional toppings like salsa or Greek yogurt.
Notes
Make wraps in advance and store in the fridge for a quick meal. Can be baked instead of fried for a healthier alternative.
