Ingredients
Scale
- 1 cup (125–130 g) self-rising flour
- 1 cup (225–240 g) plain Greek yogurt
- 1 tablespoon melted butter, optional, for brushing
The dough itself uses just two ingredients. The optional butter gives the baked rolls a softer, richer finish.
No self-rising flour? Make your own
- 1 cup (125–130 g) all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
Whisk these together well before adding the yogurt.
Equipment you will need
- Medium mixing bowl and a spoon or spatula
- Baking sheet
- Parchment paper
- Measuring cups or a kitchen scale
- Pastry brush
- Wire cooling rack
Instructions
These five steps are quick and simple. Preheat the oven first, since the dough should go in right after it is shaped.
Step 1: Preheat the oven
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease it.
Step 2: Mix the dough
- Add the Greek yogurt and self-rising flour to a medium bowl.
- Stir with a spoon or spatula until a shaggy dough forms. Use your hands to gently bring it together.
- The dough should be soft and slightly sticky. If it is too sticky to handle, add flour a teaspoon at a time. Avoid adding too much, or the rolls may become dense.
Step 3: Shape the rolls
- Lightly flour your hands and divide the dough into 4 equal portions.
- Gently shape each portion into a ball and place it on the prepared baking sheet, leaving space between the rolls.
- For a smoother finish, lightly dampen your fingertips and gently shape the tops.
Step 4: Bake until golden
- Bake for 18-23 minutes, until the rolls are lightly golden and cooked through.
- Check the bottoms and centers before removing them. If they still look doughy inside, bake for another 3-5 minutes.
Step 5: Brush with butter
- If desired, brush the warm rolls with melted butter immediately after baking.
- Let them rest for about 5 minutes before serving.
- Enjoy them warm for the softest texture.
