- 2 pounds potatoes (red or Yukon gold)
- 4 slices bacon
- 1 large onion, chopped
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon sugar
- Salt and pepper to taste
- Chopped fresh parsley (optional)
Instructions
- Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Crumble once cooled, reserving drippings.
- Caramelize the onions in the same skillet with the bacon drippings for about 10 minutes until golden.
- Whisk together the apple cider vinegar, olive oil, sugar, salt, and pepper in a large mixing bowl.
- Combine the diced potatoes with the dressing and mix gently. Fold in the caramelized onions and crumbled bacon.
- Taste and adjust seasoning before serving warm or at room temperature.
