Description

A warm and comforting potato salad with crispy bacon, caramelized onions, and a tangy dressing, perfect for any gathering.


Ingredients

  • 2 pounds potatoes (red or Yukon gold)
  • 4 slices bacon
  • 1 large onion, chopped
  • 1/3 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Crumble once cooled, reserving drippings.
  3. Caramelize the onions in the same skillet with the bacon drippings for about 10 minutes until golden.
  4. Whisk together the apple cider vinegar, olive oil, sugar, salt, and pepper in a large mixing bowl.
  5. Combine the diced potatoes with the dressing and mix gently. Fold in the caramelized onions and crumbled bacon.
  6. Taste and adjust seasoning before serving warm or at room temperature.
