Ingredients

  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • 10 flour or corn tortillas
  • 2 cups queso cheese sauce
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup enchilada sauce
  • Diced tomatoes (optional)
  • Sliced jalapeños (optional)
  • Green onions (optional)
  • Fresh cilantro (optional)
  • Sour cream (optional)
  • Avocado (optional)

Instructions

  1. Combine the shredded chicken, diced onion, minced garlic, chili powder, cumin, paprika, salt, black pepper, Mexican blend cheese, and chopped cilantro in a large bowl. Mix until well combined.
  2. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  3. Spread about 1/2 cup of enchilada sauce over the bottom of the prepared baking dish.
  4. Warm the tortillas in the microwave for about 30 seconds to make them easier to roll.
  5. Add a portion of the chicken mixture to the center of each tortilla and roll tightly, placing seam-side down in the baking dish.
  6. Pour the queso cheese sauce over the enchiladas, covering them generously.
  7. Sprinkle the shredded Monterey Jack and cheddar cheeses over the top.
  8. Cover the dish loosely with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
  10. Let the dish rest before garnishing with your choice of toppings.

Notes

Assemble the enchiladas a day in advance for easier prep. Customize with your favorite veggies or cheese.
