- 1 large eggplant, sliced
- 2 cups marinara sauce
- 12 oz ziti pasta
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplant and sprinkle with salt. Let it sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- In a skillet, heat olive oil over medium heat and sauté the eggplant until golden brown.
- Cook the ziti pasta according to package instructions until al dente.
- In a large baking dish, layer half of the marinara sauce, half of the cooked ziti, half of the eggplant, and half of the mozzarella cheese.
- Repeat the layers with the remaining ingredients.
- Top with grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add red pepper flakes to the marinara sauce.
- Feel free to substitute other vegetables like zucchini or mushrooms.
- This dish can be made ahead of time and stored in the refrigerator before baking.
