Ingredients

  • 1 large eggplant, sliced
  • 2 cups marinara sauce
  • 12 oz ziti pasta
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant and sprinkle with salt. Let it sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a skillet, heat olive oil over medium heat and sauté the eggplant until golden brown.
  5. Cook the ziti pasta according to package instructions until al dente.
  6. In a large baking dish, layer half of the marinara sauce, half of the cooked ziti, half of the eggplant, and half of the mozzarella cheese.
  7. Repeat the layers with the remaining ingredients.
  8. Top with grated Parmesan cheese.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the marinara sauce.
  • Feel free to substitute other vegetables like zucchini or mushrooms.
