Description

A delicious and spicy dish featuring garlic chili oil noodles tossed with a medley of roasted vegetables.


Ingredients

  • 200g noodles
  • 3 tablespoons garlic chili oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the sliced bell pepper, zucchini, and broccoli with a drizzle of olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
  4. Meanwhile, cook the noodles according to package instructions, then drain.
  5. In a large pan, heat the garlic chili oil over medium heat.
  6. Add the cooked noodles and soy sauce, tossing to combine.
  7. Once the vegetables are roasted, add them to the noodles and mix well.
  8. Serve hot, garnished with sesame seeds.

  • Adjust the amount of garlic chili oil to taste for desired spiciness.
  • Feel free to add other vegetables like carrots or snap peas.
