Ingredients

- 1.75–2 kg whole chicken, patted dry
- Salt and black pepper to taste
- 2 tsp olive oil
- 1 lemon, quartered
Instructions
- Preheat your oven to 220°C (425°F).
- Pat the chicken dry with paper towels, then season generously inside and out with salt and black pepper.
- Rub the olive oil all over the chicken.
- Stuff the quartered lemon inside the chicken’s cavity.
- Place the chicken in your roasting pan, then let it roast in the oven for about 1 hour and 20 minutes.
- Rest the chicken for 10-15 minutes before carving.
Notes
You can season your chicken the night before for deeper flavor. Skipping the drying step can lead to soggy skin, so be sure to pat it dry.
