- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup tzatziki sauce
- 4 cups cooked rice or quinoa
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
- Add the cubed chicken to the marinade and let it sit for at least 30 minutes.
- Preheat the grill or a grill pan over medium-high heat.
