  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 4 cups cooked rice or quinoa

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill or a grill pan over medium-high heat.
