- 8 oz elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1 cup milk
- 1 cup sour cream
- 1 can (4 oz) diced green chiles
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions; drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour, garlic powder, onion powder, salt, and pepper to create a roux.
- Gradually whisk in the milk, cooking until the mixture thickens.
- Remove from heat and stir in the cheddar cheese and sour cream until smooth.
- Add the cooked macaroni and diced green chiles to the cheese sauce, mixing well.
- Transfer the mixture to a greased baking dish and top with Parmesan cheese.
- Bake for 20-25 minutes or until bubbly and golden on top.
Notes
- For extra spice, add more diced green chiles or a dash of hot sauce.
- This dish can be made ahead of time and stored in the refrigerator before baking.
