- 1 cup shredded cheese (cheddar and mozzarella or pepper jack)
- 1 cup cooked rice (white, brown, or quinoa)
- 1/2 cup refried beans (black or pinto)
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Cooking spray or butter for frying
Instructions
- In a mixing bowl, combine the cooked rice, refried beans, shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until the mixture becomes creamy and cohesive.
- Lay one tortilla flat on a clean surface and spoon a generous amount of the filling into the center.
- Fold the sides of the tortilla over the filling and roll it tightly from the bottom up.
- Heat a skillet over medium heat, and coat lightly with cooking spray or melt a tablespoon of butter.
- Place the burritos seam side down in the skillet. Cook for about 2-3 minutes per side until they reach a golden brown hue.
- Remove from the skillet and let cool slightly before slicing them in half. Serve warm.
