Description

Grilled Veggie and Halloumi Skewers are a delicious and healthy dish perfect for summer barbecues or as a light meal. These skewers combine colorful vegetables and savory halloumi cheese, grilled to perfection.


Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 200g halloumi cheese, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the sliced zucchini, bell pepper, red onion, and halloumi cheese.
  3. Drizzle with olive oil, and sprinkle with oregano, salt, and pepper. Toss to coat.
  4. Thread the vegetables and halloumi onto skewers, alternating between them.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the veggies are tender and the halloumi is golden brown.
  6. Remove from the grill and serve warm.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
