Description

  • 2 cups colorful vegetables (bell peppers, zucchini, and carrots)
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup cooked rice or pasta
  • 1 can diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the ground turkey and brown it, breaking it apart as it cooks.
  4. Once browned, add the colorful vegetables and cook until softened (about 5-7 minutes).
  5. Stir in the cooked rice or pasta, diced tomatoes, garlic powder, onion powder, salt, pepper, and Italian seasoning until well combined.
  6. Transfer the mixture to a greased casserole dish and smooth the top.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  9. Allow to cool slightly before serving.
