Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
- Cream together the softened butter, vegetable oil, and sugar in a large bowl until light and fluffy, about 3-5 minutes.
- Beat in the mashed bananas, eggs, and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped walnuts until evenly distributed.
- Divide the batter between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then remove them to a wire rack to cool completely.
- Beat the heavy cream with powdered sugar until soft peaks form.
- Assemble the cake by spreading the cream between the layers and on top before garnishing with walnuts.
Notes
For optimal flavor, use very ripe bananas with brown spots. You can bake the cakes one day in advance and store them in the refrigerator.
