- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 2 eggs
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- For frosting:
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1 tablespoon lemon juice
- Lemon zest for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust by combining the graham cracker crumbs, sugar, and melted butter in a mixing bowl. Mix until well incorporated.
- Spoon the mixture into the bottom of a springform pan and press it down firmly.
- Make the cheesecake filling by beating the cream cheese until smooth. Slowly add in the sour cream, granulated sugar, eggs, lemon juice, lemon zest, and vanilla extract, mixing until velvety.
- Pour the cream cheese mixture over the prepared crust and bake for about 50-60 minutes until set at the edges but still jiggly in the center.
- Allow your cheesecake to cool on the counter for at least an hour, then refrigerate for a minimum of 4 hours or overnight.
- Prepare the frosting by beating together softened cream cheese and butter until smooth. Gradually add powdered sugar and lemon juice.
- Frost the chilled cheesecake with the cream cheese frosting and garnish with lemon zest.
- Slice and enjoy!
