Description

This delicious lemon cheesecake cake features a creamy filling on a buttery graham cracker crust, finished with a luscious cream cheese frosting.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • For frosting:
  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 tablespoon lemon juice
  • Lemon zest for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust by combining the graham cracker crumbs, sugar, and melted butter in a mixing bowl. Mix until well incorporated.
  3. Spoon the mixture into the bottom of a springform pan and press it down firmly.
  4. Make the cheesecake filling by beating the cream cheese until smooth. Slowly add in the sour cream, granulated sugar, eggs, lemon juice, lemon zest, and vanilla extract, mixing until velvety.
  5. Pour the cream cheese mixture over the prepared crust and bake for about 50-60 minutes until set at the edges but still jiggly in the center.
  6. Allow your cheesecake to cool on the counter for at least an hour, then refrigerate for a minimum of 4 hours or overnight.
  7. Prepare the frosting by beating together softened cream cheese and butter until smooth. Gradually add powdered sugar and lemon juice.
  8. Frost the chilled cheesecake with the cream cheese frosting and garnish with lemon zest.
  9. Slice and enjoy!
