- 1 large beef rib roast (about 2–3 lbs)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat the oven to 450°F (232°C).
- Combine salt, black pepper, olive oil, minced garlic, chopped rosemary, and thyme in a mixing bowl.
- Rub the herb mixture all over the beef rib roast.
- Place the roast in a roasting pan, bone-side down.
- Roast in the preheated oven for approximately 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours.
- Remove the roast from the oven and let it rest for 15-20 minutes before slicing.
