  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Combine salt, black pepper, olive oil, minced garlic, chopped rosemary, and thyme in a mixing bowl.
  3. Rub the herb mixture all over the beef rib roast.
  4. Place the roast in a roasting pan, bone-side down.
  5. Roast in the preheated oven for approximately 20 minutes.
  6. Reduce the oven temperature to 325°F (163°C) and continue cooking for about 1.5 to 2 hours.
  7. Remove the roast from the oven and let it rest for 15-20 minutes before slicing.
