- 2 large sweet potatoes
- 2 tbsp extra virgin olive oil (divided)
- 1 can (15 oz) chickpeas (drained, rinsed, and dried completely)
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
- 1 large ripe avocado (sliced thinly)
- 1/2 cup feta cheese (crumbled)
- 3 tbsp hot honey
- 1/4 tsp red pepper flakes
- 2 tbsp fresh parsley (finely chopped)
Instructions
- Prepare Your Oven: Preheat the oven to 400°F (200°C).
- Start with the Sweet Potatoes: Pierce the sweet potatoes several times with a fork, then brush with 1 tablespoon of olive oil. Place them on a baking sheet and bake for about 45 minutes, or until tender.
- Toss the Chickpeas: In a mixing bowl, combine the drained, rinsed, and dried chickpeas with the remaining 1 tablespoon of olive oil, smoked paprika, garlic powder, and sea salt. Toss to ensure each chickpea is well-coated.
- Bake the Chickpeas: Spread the seasoned chickpeas on a baking sheet and bake alongside the sweet potatoes for 20-25 minutes, until they turn crispy and golden.
- Fluff the Sweet Potatoes: Once baked, slice the sweet potatoes open and fluff the insides with a fork to make space for toppings.
- Assemble Your Masterpiece: Top each sweet potato generously with crispy chickpeas, thin avocado slices, crumbled feta, a drizzle of hot honey, a sprinkle of red pepper flakes, and chopped parsley. Serve immediately.
Notes
Consider meal prepping by baking the sweet potatoes and chickpeas ahead of time. For a crispy texture, use an air fryer for the chickpeas. Feel free to get creative with toppings!
