- 2 chicken breasts
- 2 tablespoons jerk seasoning
- 4 cups chicken broth
- 2 packs of ramen noodles
- 1 cup sliced bell peppers
- 1 cup sliced green onions
- 1 cup pineapple, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Marinate the chicken breasts with jerk seasoning for at least 30 minutes.
- In a pot, bring the chicken broth to a boil.
- Add the ramen noodles and cook according to package instructions.
- In a skillet, cook the marinated chicken until fully cooked, then slice it.
- Prepare the pineapple salsa by mixing diced pineapple, cilantro, lime juice, salt, and pepper in a bowl.
- Once the noodles are cooked, add sliced bell peppers and green onions to the broth.
- Serve the ramen in bowls, topped with sliced jerk chicken and pineapple salsa.
