Ingredients
Scale
- 2 boneless ribeye steaks (about 1-inch thick)
- Salt and freshly cracked black pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- Fresh parsley for garnish
Instructions
- Season the Ribeye Steaks: Generously sprinkle salt and freshly cracked black pepper over both sides of the steaks.
- Heat the Olive Oil: In a cast iron skillet, pour in the olive oil and heat it over medium-high heat.
- Cook the Steaks: Gently place the steaks in the skillet and sear for about 4-5 minutes on each side for medium-rare.
- Rest the Steaks: Remove the steaks from the skillet and let them rest on a plate, covered loosely with foil.
- Make the Sauce: Lower the heat on the skillet, add the minced garlic and sauté for about 30 seconds.
- Incorporate the Cream and Mustard: Pour in the heavy cream, stir in the Dijon mustard, and season with salt and pepper.
- Slice and Serve: Once the sauce thickens, slice the rested steaks against the grain and plate with sauce, garnished with parsley.
Notes
For a lighter version, substitute heavy cream with half-and-half. The sauce can be made ahead of time and reheated before serving.
