Description

A delightful Lemon-Peach Cake topped with creamy frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup diced fresh peaches
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, lemon zest, and lemon juice.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the diced peaches gently.
  8. Divide the batter evenly between the prepared cake pans and smooth the tops.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar and heavy cream until desired consistency is reached.
  12. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.

Notes

  • For a more intense peach flavor, use peach puree in the batter.
  • Store leftovers in the refrigerator for up to 3 days.
  • This cake can be made a day in advance and frosted just before serving.
