Ingredients

- 1 box of brownie mix
- 1/4 cup of water
- 1/4 cup of vegetable oil
- 2 large eggs
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- Chocolate chips (optional)
- Whipped cream (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the brownie mix with the water, vegetable oil, and eggs in a mixing bowl.
- Line a muffin tin with cupcake liners.
- Fill each liner halfway with brownie batter.
- Beat the softened cream cheese, sugar, and vanilla extract until creamy in another bowl.
- Fold in the sour cream into the cream cheese mixture.
- Spoon the cheesecake mixture over the brownie batter in each cup.
- Top with chocolate chips, if desired.
- Bake for 18-20 minutes or until set but still slightly jiggly.
- Let cool and chill in the refrigerator for at least 2 hours.
- Serve with whipped cream on top.
Notes
Prepare these cups a day in advance for an even richer dessert. They freeze well for up to three months.
