- 1 lb ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 package taco seasoning
- 1 cup salsa
- 6 small corn tortillas, cut into strips
- 2 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sour cream (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
- Add diced onion and minced garlic to the skillet and sauté until translucent.
- Stir in black beans, corn, taco seasoning, and salsa. Cook for 5 minutes until heated through.
- Layer half of the tortilla strips in a 9×13 inch baking dish.
- Pour half of the beef mixture over the tortillas.
- Sprinkle 1 cup of shredded cheese on top.
- Repeat the layers with remaining tortilla strips, beef mixture, and cheese.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Cool for a few minutes before serving, then top with shredded lettuce, diced tomatoes, and sour cream if desired.
Notes
Make-ahead options are available; assemble a day in advance for better flavor. For a crispy topping, use an air fryer.
