A delicious and healthy Maple-Miso Glazed Chicken Noodle Bowl that combines savory and sweet flavors with fresh vegetables and noodles.


Ingredients

  • 2 chicken breasts
  • 1/4 cup maple syrup
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 8 oz rice noodles
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 carrot, julienned
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix maple syrup, miso paste, soy sauce, rice vinegar, and sesame oil to create the glaze.
  2. Marinate the chicken breasts in the glaze for at least 30 minutes.
  3. Cook the rice noodles according to package instructions and set aside.
  4. In a skillet, cook the marinated chicken over medium heat until fully cooked, about 6-7 minutes per side.
  5. Remove the chicken and let it rest before slicing.
  6. In the same skillet, stir-fry the broccoli, snap peas, and carrot until tender-crisp.
  7. Add the cooked noodles to the skillet and toss with the vegetables.
  8. Serve the noodles topped with sliced chicken, green onions, and sesame seeds.
