- 2 chicken breasts
- 1/4 cup maple syrup
- 2 tablespoons miso paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 8 oz rice noodles
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a bowl, mix maple syrup, miso paste, soy sauce, rice vinegar, and sesame oil to create the glaze.
- Marinate the chicken breasts in the glaze for at least 30 minutes.
- Cook the rice noodles according to package instructions and set aside.
- In a skillet, cook the marinated chicken over medium heat until fully cooked, about 6-7 minutes per side.
- Remove the chicken and let it rest before slicing.
- In the same skillet, stir-fry the broccoli, snap peas, and carrot until tender-crisp.
- Add the cooked noodles to the skillet and toss with the vegetables.
- Serve the noodles topped with sliced chicken, green onions, and sesame seeds.
Notes
- For a vegetarian option, substitute chicken with tofu.
- Adjust the sweetness by varying the amount of maple syrup.
