- 1 1/2 lbs ground beef
- 1 onion, chopped
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup shredded cheese (optional)
- 2 lbs potatoes, peeled and cubed
- 1/2 cup butter
- 1/2 cup milk (for mashed potatoes)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the ground beef, chopped onion, breadcrumbs, milk, egg, salt, and pepper in a large mixing bowl.
- Shape the mixture into a loaf and place it in your loaf pan or a greased baking dish.
- Sprinkle the shredded cheese generously on top if using.
- Bake for approximately 1 hour or until the internal temperature reaches 160°F (70°C).
- Boil the potatoes in salted water until fork-tender, around 15-20 minutes.
- Drain the potatoes and mash them with butter, milk, salt, and pepper.
- Serve the meatloaf hot alongside the creamy mashed potatoes.
Notes
Customize by adding herbs or swap breadcrumbs for oats or crackers. Refrigerate meatloaf mix a day ahead for convenience.
