Ingredients

  • 1 onion, chopped
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup shredded cheese (optional)
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 cup milk (for mashed potatoes)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground beef, chopped onion, breadcrumbs, milk, egg, salt, and pepper in a large mixing bowl.
  3. Shape the mixture into a loaf and place it in your loaf pan or a greased baking dish.
  4. Sprinkle the shredded cheese generously on top if using.
  5. Bake for approximately 1 hour or until the internal temperature reaches 160°F (70°C).
  6. Boil the potatoes in salted water until fork-tender, around 15-20 minutes.
  7. Drain the potatoes and mash them with butter, milk, salt, and pepper.
  8. Serve the meatloaf hot alongside the creamy mashed potatoes.

Notes

Customize by adding herbs or swap breadcrumbs for oats or crackers. Refrigerate meatloaf mix a day ahead for convenience.
