Description

Ingredients

  • 4 boneless salmon fillets (approx. 6 oz each)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic (minced)
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup oil-packed sun-dried tomatoes (drained and chopped)
  • 2 tbsp capers (drained)
  • 1 small bunch fresh dill (chopped)
  • 1 fresh lemon (cut into wedges)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baking dish by arranging the salmon fillets in a single layer.
  3. Season the salmon with olive oil, minced garlic, kosher salt, and black pepper.
  4. Add the Kalamata olives, chopped sun-dried tomatoes, and capers on top of the fillets.
  5. Bake for 15-20 minutes until the salmon flakes easily with a fork.
  6. Garnish with fresh dill and serve with lemon wedges.
