- 4 boneless salmon fillets (approx. 6 oz each)
- 2 tbsp extra virgin olive oil
- 3 cloves garlic (minced)
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/2 cup pitted Kalamata olives
- 1/2 cup oil-packed sun-dried tomatoes (drained and chopped)
- 2 tbsp capers (drained)
- 1 small bunch fresh dill (chopped)
- 1 fresh lemon (cut into wedges)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the baking dish by arranging the salmon fillets in a single layer.
- Season the salmon with olive oil, minced garlic, kosher salt, and black pepper.
- Add the Kalamata olives, chopped sun-dried tomatoes, and capers on top of the fillets.
- Bake for 15-20 minutes until the salmon flakes easily with a fork.
- Garnish with fresh dill and serve with lemon wedges.
