A comforting and delicious Mexican Tater Tot Casserole with layers of seasoned meat, black beans, corn, and crispy tater tots topped with melted cheese.

- 1 bag of frozen tater tots
- 1 pound of ground beef or turkey
- 1 can of black beans, drained and rinsed
- 1 can of corn, drained
- 1 packet of taco seasoning
- 1 cup of shredded cheese (cheddar or Mexican blend)
- 1 cup of salsa
- Optional toppings: sour cream, creamy avocado, fresh cilantro
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef or turkey over medium heat until cooked through, breaking it into small pieces and draining any excess fat.
- Stir in taco seasoning, black beans, corn, and salsa until well combined.
- Layer the meat mixture evenly in a baking dish.
- Top with an even layer of frozen tater tots.
- Sprinkle shredded cheese over the tater tots.
- Bake in the oven for 30-35 minutes, until the tater tots are golden brown and crispy.
- Serve warm with optional toppings.
Notes
Make-ahead tips: Prepare the meat mixture a day ahead and refrigerate. If desired, cook tater tots separately in an air fryer for extra crispiness.
