Description

A comforting and delicious Mexican Tater Tot Casserole with layers of seasoned meat, black beans, corn, and crispy tater tots topped with melted cheese.


Ingredients

  • 1 bag of frozen tater tots
  • 1 pound of ground beef or turkey
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 packet of taco seasoning
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • 1 cup of salsa
  • Optional toppings: sour cream, creamy avocado, fresh cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef or turkey over medium heat until cooked through, breaking it into small pieces and draining any excess fat.
  3. Stir in taco seasoning, black beans, corn, and salsa until well combined.
  4. Layer the meat mixture evenly in a baking dish.
  5. Top with an even layer of frozen tater tots.
  6. Sprinkle shredded cheese over the tater tots.
  7. Bake in the oven for 30-35 minutes, until the tater tots are golden brown and crispy.
  8. Serve warm with optional toppings.

Notes
