A delicious and nutritious Middle Eastern Tahini Noodle Bowl that combines the rich flavors of tahini with fresh vegetables and noodles.
Ingredients

- 8 oz noodles (your choice)
- 1/4 cup tahini
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup chickpeas, rinsed and drained
Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- In a bowl, whisk together tahini, olive oil, lemon juice, garlic, salt, and pepper until smooth.
- In a large mixing bowl, combine the cooked noodles, cherry tomatoes, cucumber, parsley, and chickpeas.
- Pour the tahini dressing over the noodle mixture and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or carrots.
- This dish can be served warm or cold.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
