Description

A delicious and nutritious Middle Eastern Tahini Noodle Bowl that combines the rich flavors of tahini with fresh vegetables and noodles.


Ingredients

  • 8 oz noodles (your choice)
  • 1/4 cup tahini
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup chickpeas, rinsed and drained

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together tahini, olive oil, lemon juice, garlic, salt, and pepper until smooth.
  3. In a large mixing bowl, combine the cooked noodles, cherry tomatoes, cucumber, parsley, and chickpeas.
  4. Pour the tahini dressing over the noodle mixture and toss to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
