  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons melted butter
  • 2 tablespoons brown sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 2 tablespoons fresh orange juice
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon orange extract
  • Orange slices for garnish

Instructions

  1. Preheat the oven: Set your oven to 325°F (165°C) and lightly grease a muffin tin or mini cheesecake molds.
  2. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Mix until resembling wet sand, then press into each mold.
  3. Bake: Place the crusts in the preheated oven and bake for 8 minutes. Allow to cool completely in the molds.
  4. Make the cheesecake filling: In a large bowl, beat the cream cheese until smooth. Gradually add sugar, vanilla, orange zest, and juice, mixing until combined.
  5. Whip the cream: In a separate bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and orange extract until reaching stiff peaks.
  6. Combine the mixtures: Gently fold half of the whipped cream into the cheesecake mixture until smooth, being careful not to deflate the cream.
  7. Fill the crusts: Spoon or pipe the cheesecake filling over the cooled crusts and cover with plastic wrap. Refrigerate for at least 4 hours.
  8. Finish and serve: Before serving, pipe remaining whipped cream on top and garnish with orange slices.

Notes

These cheesecakes taste even better when made a day in advance. Allowing them to chill longer enhances the flavor.
