Description
A delicious and comforting bowl of ramen featuring miso-butter corn and a perfectly soft-boiled egg.
Ingredients

- 4 cups chicken or vegetable broth
- 2 tablespoons miso paste
- 2 tablespoons unsalted butter
- 1 cup corn kernels (fresh or frozen)
- 2 packs of ramen noodles
- 2 soft-boiled eggs
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a pot, bring the chicken or vegetable broth to a simmer.
- Stir in the miso paste and butter until fully dissolved.
- Add the corn kernels and cook for 5 minutes.
- Meanwhile, cook the ramen noodles according to package instructions.
- Once the noodles are cooked, drain and divide them into bowls.
- Pour the miso-butter corn broth over the noodles.
- Halve the soft-boiled eggs and place them on top of the ramen.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a vegetarian version, use vegetable broth and omit the eggs.
- Adjust the amount of miso paste to taste.
- Soft-boiled eggs can be prepared in advance and stored in the refrigerator.
