Description

A delicious and comforting bowl of ramen featuring miso-butter corn and a perfectly soft-boiled egg.


Ingredients

Scale
  • 4 cups chicken or vegetable broth
  • 2 tablespoons miso paste
  • 2 tablespoons unsalted butter
  • 1 cup corn kernels (fresh or frozen)
  • 2 packs of ramen noodles
  • 2 soft-boiled eggs
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a pot, bring the chicken or vegetable broth to a simmer.
  2. Stir in the miso paste and butter until fully dissolved.
  3. Add the corn kernels and cook for 5 minutes.
  4. Meanwhile, cook the ramen noodles according to package instructions.
  5. Once the noodles are cooked, drain and divide them into bowls.
  6. Pour the miso-butter corn broth over the noodles.
  7. Halve the soft-boiled eggs and place them on top of the ramen.
  8. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For a vegetarian version, use vegetable broth and omit the eggs.
  • Adjust the amount of miso paste to taste.
  • Soft-boiled eggs can be prepared in advance and stored in the refrigerator.
