Ingredients

  • 200g chickpea noodles
  • 2 tablespoons harissa paste
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the chickpea noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until translucent.
  4. Add sliced bell pepper and cook for another 3-4 minutes.
  5. Stir in the chickpeas, harissa paste, cumin, salt, and pepper.
  6. Cook for 5-7 minutes until heated through.
  7. Add the cooked chickpea noodles to the skillet and toss to combine.
  8. Serve hot, garnished with fresh cilantro.
