- 1 cup shredded coconut, toasted
- 1 cup chocolate chips
- 1 cup caramel sauce
- 1 cup crushed graham crackers
- 1/2 cup unsalted butter
- 1/2 cup sweetened condensed milk
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Mix together the crushed graham crackers, shredded coconut, and a pinch of salt in a large bowl.
- Melt the butter in a medium saucepan over low heat, then stir in the sweetened condensed milk and vanilla extract until smooth.
- Pour the buttery mixture over the dry ingredients and mix until there are no dry spots.
- Cool the mixture slightly, then roll it into bite-sized balls.
- Place the cookie bites on a parchment-lined baking sheet, leaving space between each.
- Melt the chocolate chips in a microwave-safe bowl and dip each cookie bite, covering completely.
- Chill the cookie bites in the fridge for about 30 minutes to set before serving.
Notes
These cookie bites can be made in advance and stored in the fridge for up to one week. Optionally, drizzle caramel over the top for an extra touch.
