A refreshing and delightful no-bake dessert made with layers of fresh berries, creamy mascarpone, and crunchy graham crackers.
Ingredients

- 2 cups fresh strawberries, hulled and sliced
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 2 cups mascarpone cheese
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 12–15 graham crackers or ladyfingers
- Zest of 1 lemon (optional)
Instructions
- Prepare the berries by washing and drying them, then slice the strawberries and set aside a handful for garnish.
- Whip the cream in a mixing bowl with powdered sugar and vanilla extract until stiff peaks form.
- Combine the mascarpone cheese with optional lemon zest, then fold in the whipped cream until blended.
- Layer the dish by starting with a layer of the mascarpone mixture, followed by graham crackers or ladyfingers, then sprinkle a layer of mixed berries. Repeat the layers and finish with mascarpone on top.
- Chill the dish with plastic wrap and refrigerate for at least 240 minutes, preferably overnight.
- Garnish with reserved mixed berries before serving.
Notes
Great for making a day ahead to enhance flavor intensity. Avoid soggy layers by drying berries thoroughly.
