Description

Deliciously chewy oatmeal raisin bars with a perfect balance of sweetness and warmth from cinnamon, ideal for any occasion.

Ingredients

Scale
  • 1 cup oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 cup raisins
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine dry ingredients in a medium bowl: whisk oats, flour, brown sugar, white sugar, cinnamon, baking soda, and salt.
  3. Cream the butter with both sugars until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
  4. Fold the dry ingredients into the wet ingredients until just combined. Gently stir in the raisins.
  5. Pour the mixture into the prepared baking pan, spreading it evenly.
  6. Bake for 20-25 minutes, until the top is golden brown and a toothpick comes out clean.
  7. Cool for 10 minutes, then move to a wire rack to cool completely before slicing.

Notes

You can customize these bars by swapping raisins for chocolate chips or adding chopped nuts for extra crunch.
