- 1 cup oats
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 cup raisins
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine dry ingredients in a medium bowl: whisk oats, flour, brown sugar, white sugar, cinnamon, baking soda, and salt.
- Cream the butter with both sugars until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
- Fold the dry ingredients into the wet ingredients until just combined. Gently stir in the raisins.
- Pour the mixture into the prepared baking pan, spreading it evenly.
- Bake for 20-25 minutes, until the top is golden brown and a toothpick comes out clean.
- Cool for 10 minutes, then move to a wire rack to cool completely before slicing.
