Ingredients

  • 2 cups cherry tomatoes
  • 1 cup Kalamata olives
  • 1 red onion, sliced
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the chicken breasts, cherry tomatoes, olives, red onion, and bell peppers.
  3. Drizzle with olive oil and sprinkle with garlic, oregano, thyme, salt, and pepper.
