Ingredients

  • 4 filet mignon steaks, about 1.52 inches thick
  • 12 tbsp olive oil
  • 1 tsp kosher salt
  • 2 tbsp herb butter
  • 1 lemon, for squeezing

Instructions

  1. Heat the olive oil in your cast iron skillet over medium-high heat until shimmering.
  2. Season each filet mignon generously with kosher salt on both sides.
  3. Sear the steaks in the skillet for about 4-5 minutes on each side for medium-rare.
  4. Add the herb butter during the last minute of cooking, spooning it over the steaks.
  5. Rest the steaks on a cutting board for at least 5 minutes.
  6. Squeeze fresh lemon juice over the steaks before serving.

Notes

Make herb butter in advance by mixing softened butter with chopped herbs and refrigerate until ready to use.
