Delicious Peach Cobbler Bars topped with a crunchy oat crumble, perfect for dessert or a sweet snack.

- 2 cups fresh peaches, sliced
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the flour, oats, brown sugar, granulated sugar, baking powder, cinnamon, and salt.
- Add the melted butter and vanilla extract to the dry ingredients and mix until crumbly.
- Press half of the mixture into the bottom of a greased baking dish.
- Layer the sliced peaches over the crust.
- Sprinkle the remaining crumble mixture over the peaches.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For a sweeter taste, add more sugar to the peaches.
- Serve warm with ice cream for an extra treat.
- Store leftovers in an airtight container in the refrigerator.
