Instructions
- Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the egg whites until soft peaks form.
- Gradually add the granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.
- Mix in the vanilla extract and white vinegar.
- Spoon the meringue onto the prepared baking sheet, shaping it into a round disc with a slight well in the center.
- Bake for 1 hour, then turn off the oven and let the meringue cool completely inside.
- In a separate bowl, whip the heavy cream until soft peaks form.
- In another small bowl, combine the fresh herbs with powdered sugar to create the herb sugar.
- Once the meringue is cool, top it with whipped cream, sliced peaches, and mixed berries.
- Sprinkle the herb sugar over the top before serving.
