Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 2 ripe peaches, sliced
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tablespoon fresh herbs (like mint or basil), finely chopped
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites until soft peaks form.
  3. Gradually add the granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.
  4. Mix in the vanilla extract and white vinegar.
  5. Spoon the meringue onto the prepared baking sheet, shaping it into a round disc with a slight well in the center.
  6. Bake for 1 hour, then turn off the oven and let the meringue cool completely inside.
  7. In a separate bowl, whip the heavy cream until soft peaks form.
  8. In another small bowl, combine the fresh herbs with powdered sugar to create the herb sugar.
  9. Once the meringue is cool, top it with whipped cream, sliced peaches, and mixed berries.
  10. Sprinkle the herb sugar over the top before serving.
