Description
A refreshing summer treat made with ripe peaches, a swirl of strawberry puree, and a hint of mint.
Ingredients

- 4 ripe peaches, pitted and chopped
- 1 cup strawberries, hulled and sliced
- 1/4 cup fresh mint leaves
- 1/4 cup honey or agave syrup
- 1 cup water
Instructions
- In a blender, combine the chopped peaches, honey, and water. Blend until smooth.
- In a separate bowl, mash the strawberries and mix in finely chopped mint leaves.
- Pour the peach mixture into popsicle molds, filling them halfway.
- Add a layer of the strawberry-mint mixture on top of the peach layer.
- Insert popsicle sticks and freeze for at least 4-6 hours or until solid.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds.
Notes
- For a vegan option, use agave syrup instead of honey.
- Feel free to adjust the sweetness according to your taste.
- These popsicles can be stored in the freezer for up to 2 weeks.
